Grilled Chicken


There's nothing better than the rich, flavorful, succulent taste of grilled chicken. This particular dish is very simple to prepare and doesn't take long to make. It is also perfect for a make ahead as it can be stored in the freezer for when you need it. Grilled chicken is very easy to make and also very easy to mess up. Oftentimes the chicken could come out flat and very dry. Marinating the chicken can solve this problem but not doing it the right way may even cause the chicken to be even more dry and bland. The perfect recipe would not only make your grilled chicken juicy and delicious but also fresh.



Ingredients

  • Chicken (1½ kg)
  • Garlic cloves (4 minced)
  • Crushed ginger (1 teaspoon)
  • Dried oregano (½ teaspoon)
  • Vegetable/olive oil (6 tablespoons)
  • Dried thyme (1 tablespoon)
  • Curry (1 tablespoon)
  • Lemon zest (1½ )
  • Ground black pepper (½ teaspoon)
  • Salt (2 teaspoons)
  • Dried rosemary (1 teaspoon/optional)
  • Onion bulb (1)
  • Seasoning cubes (2)
  • Suya spice (4 tablespoons)

Preparation

Gather all your ingredients and tools.


Step 1

The first step is to wash and prepare the chicken. Trim and discard excess fat from chickens. If you are using chicken breasts, place the chicken in a freezer bag then beat it with a rolling pin or meat mallet. This tenderizes the chicken and ensures even cooking. The next step is the marinade. Grab your lemon and scrape the zest. Place your lemon zest in a freezer bag or bowl then add garlic, ginger, oregano, onion, oil, thyme, curry, black pepper, suya pepper, salt, and rosemary.


Step 2

Massage the marinade into the chicken until thoroughly coated. Seal the bag then place it in a container to avoid leakage then put it in the freezer (or just tightly seal the bowl if that's what you are using). Let the chicken marinate for up to 2 hours or overnight. The longer you marinate, the better the taste of your chicken.



Step 3

Preheat grill to medium-high heat and lightly oil the grates. Remove the chicken from the marinade and let the excess drip off. Grill chicken for 10-15 minutes on each side or until cooked through. Occasionally baste the chicken with the reserved marinade.


Step 4

After grilling the chicken let it rest for a minute or two before cutting it up. This helps the chicken retain all its juices and moisture. Garnish with chopped parsley if desired and serve.
