The Nigerian sandwich is an imitation of the foreign club sandwiches found worldwide but with a twist. The Nigerian sandwich uses ingredients that are readily found in the local markets and stores.
A good sandwich is determined by the filling. Also, the type of filling you use automatically changes the name of the sandwich you are making.
Sandwiches are very versatile. If you are on a strict diet or on a weight loss journey, you can also make healthier gluten-free and vegan sandwiches.
In this recipe, we’ll be using sardines or tuna to make our Nigerian sandwich, so you can call it a tuna sandwich.

Assemble your ingredients.
Boil your eggs with salt and leave to cool completely in room temperature water after cooked. Peel off the shells and cut the eggs into tiny bits.
Wash your tomatoes, take out the seeds and cut lengthwise.
Wash your lettuce and put in a colander to strain out the water.
Cut the crusts from your bread, if you’re using sliced bread. There is no need if you’re using baguettes.
Mix the sardines with the cut eggs, butter or mayonnaise together in a plate and mash it up till smooth.
Add the oil to help make it more spreadable.
Add the pepper flakes and mix it in. Set aside.
If you’re using sliced bread:
To assemble the sandwich, place one piece of bread on a clean, flat surface.
Spread your butter/mayo, egg, and sardine mixture over the bread.
Place your tomatoes and lettuce over the mixture and cover with another slice of bread.
Repeat this until you have four sliced bread stacked, then cut your sandwich diagonally.
If you’re using a baguette:
Cut the bread clean through the center such that it is can hang open on one end.
Spread your butter/mayo, egg, and sardine mixture over the bread.
Place your tomatoes and lettuce over the mixture and cover with the other end.
